HAND DUG WELLS--GREEK DINNER

Hand dug well with temporary cap, will be cut off a few inches from the ground, capped with a permanent cap and hand pump.

Temporary cap pulled back.

View down the well. Diggers descend to the bottom, dig, lift buckets of dirt with the rope, adding the liner rings on top as they fall deeper and deeper as they dig . Rings are made on site.

Groupies. Love the extensions on the little girl.

Women at the well, spring capture and spigots.

Filling the bidons.

The young women help each other lift the bidons onto their heads.

Nearly completed spring capture, with the curious come to see the Mundeles, and to draw water.

A young girl filled this large bidon, then this middle aged lady took it, put it on her head, hiked about a half mile up a steep incline with this almost 80 lb load.

These three wanted their picture taken.

Dinner at the Greed restaurant, actually located on the grounds of the Greek Orthodox Church. The clientele was entirely white. The servers were all African. We added a tip to the total, and the serving girl came to me troubled, showed me the written total, and started counting the money, bewildered that had given her too much, when I explained I had given a little extra for her, then she was delighted. I wonder about the tipping here, but we like to be generous, and tip at the American rate.

Baked Brie with tomato.

Elder Merkley.

The Mission President's adventurous culinary foray, spaghetti, with plenty of cheese. "There is never enough cheese."

Beef brochette, frites, Moussaka.

Capitaine (popular fish) sauce Provencale, pomme de terre puree, garnis de tomates aux oignons.

Assorted Greek cakes, mostly coconut, one baklava, slathered with honey.

The presidential special. Even though not on the menu, they prepare it for him at any restaurant, nine times out of ten. There is never enough chocolate. It disappeared quickly between the two of them.
